This design assumes an unobstructed, fully open exhaust during normal cooking. Set temperature primarily with the amount and size of burning wood, then make small changes at the combustion-air intake. Do not choke the stack to correct an oxygen-starved fire.

What the airflow estimate means
The CFM number estimates how much hot air and smoke will move through the smoker and leave the stack each minute. The model assumes that the entered stack is unobstructed and its damper is fully open. Actual flow changes with fire and exhaust temperature, intake position, wind, air leaks and fabrication details. Use it to compare design changes, not as a guaranteed real-world flow rate.
Design one intentional airflow plane.
For a traditional offset, relate the top of the throat, the primary cooking rack and the collector entrance deliberately. The upper rack can add capacity, but it normally operates in a hotter part of the chamber. Reverse-flow designs use a different path below the plate and back across the food.
Watch the smoke, not only the thermometer.
Burn clean, dry wood and preheat the next split when practical. A newly added split may produce a brief period of heavier smoke while it ignites, but the exhaust should quickly return to thin blue or nearly invisible.
If thick white smoke continues, increase combustion air enough to restore a strong flame. Once the smoke cleans up, reduce the intake gradually while watching chamber temperature. Avoid choking the exhaust to control an already dirty fire.
Control heat with the fire first.
Use the amount and size of burning wood together with gradual intake adjustments. Make one adjustment at a time and allow the smoker to respond. A smaller clean fire is generally preferable to a large fire starved for oxygen.
Measure twice. Then challenge the result.
Compare the calculated design with successful smokers of similar scale. Verify all internal dimensions, opening areas and clearances before fabrication. The report identifies assumptions so another builder can review the same design.
Quarter-inch plate is a strong starting point.
For a traditional backyard or trailer offset, ¼-inch steel provides useful thermal mass and long-term durability without the complexity of a double wall. Thinner steel can work on small pits, while heavier plate adds weight, cost and warm-up time.
Retain heat without choking the fire.
An insulated firebox can reduce heat loss, wood use and exterior surface temperature, especially on large pits or in cold and windy conditions. Keep the calculated inside volume and airflow openings. Control temperature with fuel rate and clean combustion instead of shrinking the fire or starving it for air.
Operate it as a natural-draft fire.
A traditional offset has no combustion fan. Hot gases rising through the stack create a slight pressure difference that pulls fresh air into the firebox, carries heat and clean-burning smoke through the cooking chamber, and sends it out the exhaust. The whole path must remain open for that draft to work.
Open the flow path
Start with the stack damper and combustion-air intake fully open. Establish a clean fire and warm the steel before loading food. During normal cooking, leave the stack fully open unless a proven procedure for your particular pit specifies otherwise.
Set the fuel loading
Build the smallest clean fire that will hold the desired chamber temperature. Add dry, seasoned splits at a steady rate instead of overloading the firebox and then starving a large fire for oxygen.
Trim the combustion air
Use the intake damper for fine control after the fire size is close. Make one small change at a time and allow the pit to respond. If the fire becomes lazy or begins smoldering, give it more air rather than closing the exhaust.
Read the exhaust
Thin blue or nearly invisible exhaust usually indicates a hot, clean-burning fire. A new split may make brief white smoke while it ignites. Persistent thick white smoke points to wet fuel, a cold fire or insufficient combustion air.
Steady flow carries clean wood-smoke compounds across the food while helping surface moisture evaporate. That supports bark formation and the distinct flavor of a well-run stick burner. Airflow is only part of the result—seasoning, temperature, rendered fat, time and meat preparation also matter—so it should not be treated as the sole cause of good bark or burnt ends.
Three intake sizes cover most smoker builds.
Each design conservatively assumes its adjustable cover exposes approximately 40% of the physical hole when fully open, with the remaining area covered by steel. The estimated CFM is recalculated for the complete smoker currently entered above; it is not a guaranteed standalone rating for the intake. Hole measurements are the cuts through the firebox wall, and the finished faceplate is larger.
